It is important to make sure your new school projector will accept data from all the primary sources you want to display. If you are using a VCR or DVD player then an S-Video input is a must. If you want to connect your school projector to external speakers, then audio outputs are important.
Many VCRs and VHS/DVD combo players do not support S-Video -- we learned that the hard way with our classroom setup. After running S-Video cables in a few of our classrooms for VHS/DVD combo players, we discovered the tiny label "S-Video is for DVD playback only" above the S-Video port. So, we had to run composite video cables instead to show VHS movies!
